Aqueles que são fritos, mas não ficam oleosos. A receita desse "milagre" chama-se gordura hidrogenada e, ao contrário do que pensa a maioria, faz muito mal à saúde.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Estudos recentes mostram que esse tipo de gordura é pior que a saturada - de origem animal - do ponto de vista cardiovascular. A causa: ela "plastifica" os vasos, levando a infartos e derrames.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Quem garante é a endocrinologista Rosina Erthal Vilella, que pesquisa o assunto há anos e explica o mal que faz essa gordura, também chamada de "Trans". O problema, segundo ela, é que os alimentos hidrogenados não se resumem a frituras. Biscoitos, sorvetes, chocolate, macarrão rápido, chips e temperos prontos fazem parte da lista.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;E o preocupante, de acordo com Rosina, é justamente a variedade de alimentos que levam esse tipo de gordura, porque eles acabam sendo ingeridos por crianças, jovens, adultos e idosos. "As pessoas estão sendo enganadas. Acreditam que estão comendo algo que faz bem, ou não faz tão mal para a saúde. E, na verdade, é justamente o oposto", diz.&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;A gordura hidrogenada é uma gordura vegetal que foi criada pela indústria para ser uma alternativa à gordura saturada, a do bacon, da lingüiça, da picanha, etc. Mas como não existe gordura vegetal no mundo, somente óleos, foi criado, então, um processo de transformação desses óleos vegetais em gordura sólida.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Aí começa o problema. Os óleos são colocados em uma câmara com gás hidrogênio, - daí o nome hidrogenada - com alta pressão e alta temperatura e o resultado não seria bem visto - e muito menos comido - por ninguém.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Os óleos se transformam em uma pasta preta, com mau cheiro, que precisa ser alvejada, para ficar sem cor e desodorizada, para ficar sem cheiro. "Ela deixa tudo crocante porque solidifica nos alimentos após a fritura, formando uma casquinha. Isso acontece também nos vasos que ficam impedidos de dilatar", esclarece a endocrinologista.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Por isso, de acordo com a médica, está se tornando comum esportistas jovens sofrerem parada cardíaca durante a prática de qualquer esporte. "Durante a atividade física, o fluxo sangüíneo aumenta, mas o vaso não dilata para a passagem do sangue. É quando ocorre o infarto".&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Alguns alimentos que contêm gordura hidrogenada: Biscoitos: Praticamente todos, principalmente os recheados e os wafers; Chips: Batata-frita. Tanto as de pacote quanto as de fast-food; Tortas e bolos: Prontos e semi-prontos (ficam bem fofos); Pães: Principalmente os de massa doce; Sorvete: A grande maioria, até os light.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;O sorvete higrogenado é mais espumoso; Chocolate: Cuidado com os diet, são os piores; Leite: Os achocolatados prontos; Margarina: Quanto mais dura pior. Fast-food: Usam essa gordura para todas as frituras porque fica crocante; Requeijão: Os muito cremosos; Pipoca de microondas; temperos prontos em tabletes ou em pó.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Discussão no Primeiro Mundo&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;As conseqüências do consumo desenfreado de gordura hidrogenada são pouco divulgadas no Brasil. O mesmo, porém, não tem ocorrido nos países desenvolvidos. Em 1994, epidemiologistas da Universidade de Harvard atribuíram ao consumo da gordura hidrogenada até 100 mil mortes prematuras por ano nos Estados Unidos.&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Desde essa época eles pediram ao Foods and Drugs Administration (FDA) - órgão regulador de alimentos e medicamentos dos EUA - alterações nos rótulos nutricionais que informassem aos consumidores quanto de gordura Trans continha cada alimento. Nada foi feito a respeito.&lt;/span&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;span style="font-size:100%;"&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Cientistas relacionaram o consumo dessa gordura vegetal a doenças metabólicas, ou à chamada Síndrome Metabólica - aumento da cintura abdominal, diabetes tipo 2, alterações dos lipídeos sangüíneos, hipertensão arterial e esteatose hepática (fígado gorduroso).&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Origem&lt;br /&gt;A descrição dessa síndrome - inicialmente chamada de Quarteto da Morte, em 1984 - coincide com o início do uso maciço dos hidrogenados pela indústria alimentícia americana.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;O epidemiologista-chefe da Escola de Medicina de Harvard, Walter Willet, diz no site www.transfreeamerica.org, que hidrogenados na alimentação foi o maior desastre da história alimentícia nos EUA. Resultou numa epidemia de obesidade e demais doenças.&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;Em 2001, foi divulgado um estudo - feito em 84 mil enfermarias, durante 14 anos - no qual ficou confirmado que a principal gordura relacionada ao Diabetes e ao aumento do colesterol e triglicerídios era a hidrogenada.&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span class="Apple-style-span"  style="color:#990000;"&gt;No ano seguinte, cientistas americanos pediram um novo estudo. Queriam que ficasse claro quanto de gordura hidrogenada uma pessoa poderia consumir por dia, sem prejudicar sua saúde. O resultado foi surpreendente: zero. Porém, um simples sanduíche pode representar um sério risco à saúde. Bactérias como a Salmonella spp e a Listeria monocytogenes, amplamente encontradas na natureza, se aproveitam da má higiene na hora do preparo dos alimentos e causam intoxicações que podem até levar à morte.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;A salmonella provoca complicações gástricas e intestinais, enquanto a listeria apresenta manifestações clínicas como febre, mal-estar e aumento dos gânglios.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- A salmonella causa problemas no tubo gastro intestinal. Os sintomas são diarréia, vômito, sangramento nas fezes e febre alta. Às vezes, a pessoa elimina a bactéria pelas fezes sem maior complicação, mas pode infectar outras pessoas ao manipular alimentos com as mãos contaminadas - explica o Dr. Edimilson Migowski, infectologista do Instituto de Puericultura e Pediatria Martagão Gesteira (IPPMG/UFRJ).&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;Dados internacionais apontam a salmonella como o principal agente de surtos nos EUA. Neste país, entre 1993 e 1997, foram contabilizados 32.610 casos, com 13 mortes. Já a Listeria monocytogenes ocupa o terceiro lugar no ranking dos surtos, respondendo por cerca de 7% dos registros, de acordo com a literatura. Segundo o especialista, essa bactéria é encontrada em uma grande variedade de alimentos crus, como carnes e vegetais não cozidos, além de leite e derivados não pasteurizados.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- A listeria causa febre e mal-estar. Ela se manifesta de forma branda em pessoas com o sistema imunológico saudável, mas pode ser perigosa para aquelas que estão com o sistema imuno deficiente devido a quadros de HIV, leucemia, sessões de quimioterapia e uso de corticóides. Nesses casos, a resposta do organismo à infecção é pior e a doença se manifesta com maior gravidade - diz o Dr. Edimilson.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- O mais arriscado é quando a listeriose acomete gestantes, podendo gerar meningite no recém-nascido. Apesar de raramente apresentar sintomas na mãe, se a meningite não for diagnosticada e tratada a tempo, pode levar ao óbito do bebê - avalia Migowski, acrescentando que o diagnóstico que acusa a presença ou não da bactéria em mulheres grávidas deve ser feito durante o pré-natal.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;Para evitar a contaminação pela salmonella e pela listeria é aconselhável seguir à risca cuidados com a higiene na manipulação e conservação dos alimentos.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- No caso da listeria, se o alimento for manipulado de acordo com práticas de higiene adequadas, como a pasteurização, você acaba diminuindo bastante ou neutralizando o risco da presença dessa bactéria, que é mais comum em regiões rurais - orienta o professor.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- Já a salmonella, mais freqüente nos centros urbanos, é adquirida principalmente ao ingerir alimentos mal lavados - reforça.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;Para quem não tem tempo de preparar as refeições em casa e adere à praticidade de almoçar em restaurantes, a atenção deve ser redobrada:&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p style="text-align: justify;"&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="color: rgb(204, 0, 0);"&gt;- É aconselhável evitar restaurantes que não zelam pela qualidade, mesmo que sejam baratos.
